Pat’s sixth supreme pie

Bethlehem baker Pat Lam is going to be working 18 hour days for the next month or so following his sixth supreme pie award win at the Bakels Supreme Pie Awards last night, with his bacon and egg pie.


Pat Lam has won the supreme pie award for the sixth time.

Pat's previous experience in supreme award winning, is his pie sales increase by 500 per cent with each win. He normally sells 200 pies per day and this increases to 1200 per day for 5 weeks after winning each award. This amount of pies means working 18 hour days, seven days a week, but he's happy to do it.

According to the national Pie Awards judges, it is the Patrick's Pie Group Gold Star Bakery recipe we should all be chasing for the classic bacon and egg pie. The Bethlehem bakery served up an impressive bacon and egg pie.

NZ Bakels managing director Brent Kersel says the winning pie looked impressive even before tasting.

"The flavour and moistness of the bacon and egg combination was mouth-watering," says Brent.

Chief judge Tim Aspinwall says the Patrick's pie has wow factor, evenly cooked golden pastry, great aroma and flavour and it says, "eat me".

"Patrick's winning bacon and egg pie ticked all these boxes."

Patrick's has won five Supreme Pie Awards since 2003, and 56 other awards in the competition.

The bakery also took home a silver award for its steak and cheese entry and a highly commended for its fruit pie - Cointreau pear, apple and cherry cheesecake flavour.

Patrick took out the Supreme Pie Award in 2003 and 2004, then repeated this in 2009 and 2010. Apart from winning his four supreme pie awards, Pat's Pies has since won 11 gold; 15 silver; 12 bronze and 10 high commended. This makes Gold Star Pat's Pies the highest pie award winner in the country.

Cambodian born, Patrick, with his wife, two sons and daughter, began baking in 1997 in an Auckland lunch bar then moved to Rotorua to own his own bakery. He's since moved to Bethlehem, Tauranga, obviously perfecting his craft over time.

A real family affair, his wife and children help out after school and during the weekends.

Pat's cooking is influenced by his culture as well as what he has picked up by living in Australia and New Zealand.

His pie flavours are varied and made with high quality ingredients. He comes up with them all, such as sweet lamb curry and his 2015 bronze winning gourmet fruit pie, Contreau Pear & Apple Cherry. He now sells 28 different pie flavours in his bakery, the majority are his winning pies, and he's running out of room to house them all.

The best steak and cheese pie went to another Tauranga bakery, Baker Bob's, and best mince and cheese went to Panmure Bakehouse in Auckland.

Baker Bob's also picked up a string of bronze medals for gourmet meat; venison, mushroom, bacon and cheese. Vegetarian; spinach pumkin and kumara, and Potato top.

This year's awards also attracted some more unusual entries. Fish pie has a tendency to divide opinion. Some love it, some hate it, and some people were force-fed it by their well-meaning grandmothers.

The gold award in the Cafe Boutique flavour section went to a Smoked Warehou and Terakihi pie from Riwaka cafe, Ginger Dynamite.

Celebrity chef Mark Southon said the range of pies on offer was incredible.

"We saw some interesting skills and flavours, such as alpaca and kimchi; braised lamb shank and butter chicken.

"There were nostalgic and Kiwi heritage pies like creamed paua, smoked fish and the addition of kumara to some pies."

A panel of 21 judges spent 10 hours judging the pies. The awards received over 5,000 entries from more than 500 entrants. Previous supreme winners have included a mince and cheese, a potato top pie and a lamb cutlet and kumara mash entry from Carterton.

Well I can attest that the pies that are made at Pats have always satisfied the customers I have taken there. So fortunate to have such a wonderful bakery so close, and with such a winning streak you can never loose never mind which pie you choose. So happy for the owners and bakers.
